Paleo Meal Plan Monday

This week’s Meal Plan Monday is all about Paleo breakfast, lunch, and snack ideas.

We did the AIP diet for 21 days and reintroduced foods slowly (at first anyway) but have completely fallen off the wagon. I had great results while doing the AutoImmune Protocol (lost over 13 inches & 24.5 lbs, increased energy, and my psoriasis cleared up) but my mom didn’t see any improvement, in fact she started having other issues.  She’s not a big meat eater and wasn’t getting enough protein without nuts, seeds, and eggs so we decided to not continue past 21 days.  Now, we are going to try a modified Paleo so I can get back on track with my weight loss and she’ll hopefully start seeing some of her Lupus symptoms lessen!

Paleo Breakfast Recipes:

Breakfast Ideas

Tomato Egg Cups
Banana Muffins & Apple Muffins (my mum can’t do apple so we make large batches of both) and
Coconut Flour Pancakes with Watermelon Cream (using coconut cream instead of dairy)
Mango Smoothies
Southwest Hash
Easy Frittata
Apple Crisp

Paleo Lunch Recipes:

Lunch Recipes

Bison Burger & Cauliflower with garlic & lemon
Squash Pesto Spaghetti
Chicken salad on Paleo Bread
Cabbage Borscht
Homemade Pizza with Cauliflower Crust
Thai Basil Chicken Lettuce Wraps
Cajin Beef Chili

Paleo Snack Ideas:
