Slow Cooker Pork Roast with Apple Cider Gravy

Five ingredients and a few minutes of prep time earlier in the day is all it takes to put this Slow Cooker Pork Roast with Apple Cider Gravy on the table tonight for dinner. And a slow cooker guarantees that your roast pork will be tender and moist every time.

I love fall!  Autumn and spring are definitely my favorite seasons with all the gorgeous colors, but fall provides a bountiful harvest for many of my favorite foods.  Here in Iowa, the apple harvest starts in July so I've been playing around with some amazing apple recipes.  

This year, we are canning apple pie filling, apple butter, applesauce, and of course making Applesauce Sundaes! Sweets are great, but I was starting to crave something a little more savory, so I came up with this Slow Cooker Pork Roast with Apple Cider Gravy.

Slow Cooker Pork Roast with Apple Cider Gravy

Ingredients for Slow Cooker Pork Roast with Apple Cider Gravy

  • 2 1/2 to 3 lb. pork loin (or another pork roast)
  • 4 medium apples (sliced)
  • 2 sweet onions (sliced)
  • 2 c. apple cider
  • 1 T. cornstarch
  • Salt & pepper, to taste

How to Make Slow Cooker Pork Roast with Apple Cider Gravy

  1. Scatter half of the onion and apple slices in the bottom of a slow cooker.
  2. Cut slits about every inch in the pork loin.
  3. Stuff slits with apple and onion slices.
  4. Set pork loin in the slow cooker on top of onion and apple slices.
  5. Season meat generously with salt and pepper.
  6. Pour apple cider around meat in a slow cooker.
  7. Cook on High 5-6 hours or Low 8-10 hours.
  8. Leaving the slow cooker on, remove pork loin to a platter to rest.
  9. With a cooking spoon or ladle, dip out about 1/2 cup of juices from the slow cooker to a jar or plastic container with a lid.
  10. Add corn starch to the hot cooking liquid you removed.
  11. Add the lid to a container of cornstarch and cooking liquid. Shake until cornstarch is dissolve.
  12. Add cornstarch mixture back into the slow cooker and stir to combine with other juices.
  13. Let simmer in the slow cooker for 15-20 minutes until the gravy has thickened.
  14. Shred pork.
  15. Serve with some of the cooked apples and onions and gravy.

What do I need to make this slow Cooker Pork Roast?

My slow cooker is my favorite kitchen gadget.  Well, gadgets.  I have a few of them and each serves a different purpose. My go-to is this 6 qt Crock-Pot. I love the locking lid & programming options.  I use this for practically everything but have an 8 qt Hamilton Slow Cooker for when we have guests or I'm doubling larger recipes for the freezer.

Cutting “pockets” in the meat and stuffing them with apple and onion slices ensures great flavor in every bite. I used a pork loin here because that cut was on sale at my market, but you could easily use another cut of pork roast in this recipe, as well.

Serve it up with buttery mashed potatoes, rice, or even egg noodles. A quick sauteed green bean completed our meal. Try adding a little lemon zest to your green vegetables. The acidity will brighten up the rich flavors of the meat.
